Peach Chutney

Hi everybody! It’s been a while. Sorry! Ive been busy making recipes, like this peach chutney. Yummerz!

Begin with peaches, and lots of them. I even threw in an apple from the backyard tree (why not?)DSCN0057

Dice up half an onion, and cook it down a little bit. DSCN0063

Slice up your peaches. (I used 3 different kinds – how did I manage that?)DSCN0064

Bring all the ingredients to a boil, and let simmer and bubble for an hour. DSCN0068

Clean your jars. DSCN0069

Fill with chutney and boil again. DSCN0071Let them cool, and you’ll hear a little “pop” as they seal themselves.

Peach Chutney

You will need:

8 large peaches

1/2 onion

2 cups vinegar

1 1/2 cups apple juice

2 cups sugar or honey

1/2 cup fresh ginger

2 tbsp cinnamon

1 tsp allspice

1 tsp nutmeg

2 tsp whole mustard seed

Chop onion and brown in a pot with a little bit of oil. While browning, chop up your peaches. Add them to the pot. Add juice, vinegar, honey, ginger and spices. Bring to a boil then let simmer for an hour. Boil your cans, and let cool slightly. Fill the cans, seal them, and then transfer back to pot of boiling water. boil for 10-15 minutes. Let the cans cool, and you will hear a little “pop” as they seal themselves. Enjoy!
