Chicken and Pumpkin Chili

Unfortunately, it has come to the point in the weather that I want to make chili. Yep, that’s right. It’s the first week of September, and I’m cold! I resent this non-indian summer…


This recipe was really easy and really good!DSCN0081

First, brown your meat in the bottom of the your pot. DSCN0082

Dice up all your veggies and add them to the pot too. I added a cob of corn to this recipe. DSCN0085

Then add the pumpkin, beans and tomato sauce. DSCN0090Enjoy on a cold, rainy fall day.

Chicken Pumpkin Chili

You will need:

1 lb ground chicken

1 can pumpkin puree

1 can red kidney beans

1 can black beans

2 cups tomato sauce

2 onions

2 sweet bell peppers

3 celery stalks

1 corn on the cob (or can of corn)

2 tsp chili powder

2 tsp cumin

2 tsp hickory smoke seasoning

salt and pepper to taste

Begin by browning the meat in a large pot with a little oil. Chop your veggies and add to the pot. Cook them down for 10-15 mins. Add the spices and stir to combine. Add pumpkin, tomato sauce and the beans, then bring to a simmer. Let simmer for 20 mins. Serve with sour cream and cheddar cheese!
